Sabudana Khichdi is a delicious breakfast food which is most popular in parts of Western India including Gujarat, Maharashtra, Madhya Pradesh, and Rajasthan. It is made from the soaked Sago or Sabudana. Sago khichdi is also available as a street food and it is widely consumed throughout the year or during the Hindu religious occasions. Sabudana is washed and soaked for 2 to 3 hrs to soften the globules. It is then fried with cumin seeds, salt, coriander, lemon juice, green chilies, diced potatoes and fried peanuts. You can also add vegetables in Sabudana Khichdi to enhance the nutritional value, flavor, and color.

Sabudana is obtained from the starch extracted of the sago palm stems. Commercially, Sabudana is available as small white granules. Sabudana is used in variety of Indian breakfast dishes such as Payasam, soup, gruel, poha, and upma. Gruel is a healthy option to carbonated drinks as it doesn’t contain artificial sweeteners, preservatives and chemicals. Sago contains high amount of carbohydrate along with small amount of protein, calcium, iron, dietary fibres and vitamins. Adding Peanuts enhances the overall protein content which is good for those who hit the gym or are into bodybuilding, making it a balanced snack. Sabudana Khichdi has high calorie content due to the presence of fat and starch. Sabudana quickly boosts energy mainly due to the high content of carbohydrates and starch. Hence, it is a popular food during the religious festivals. Sabudana gruel is easy to digest and hence it is beneficial for ailing patients. Sabudana has a cooling effect on the body.
