Kokam is also known as ‘cool king’ of Indian fruits which appears dark red. It is a native of Western Ghat and mostly used in the states of Maharastra, Goa, Kerala and Gujarat to enhance a tangy flavor of the dish. Soak the dry kokum in water for 3-4 hours. Grind it along with a part of reserved water to make a smooth mixture. Strain it and keep aside. Add sugar in the remaining reserved water and boil it till the solution becomes thick. Put Kokum mixture, cardamom powder and cumin powder to the sugar syrup. Mix properly and store it in an airtight container.
