Homemade Dahi is prepared through the process of bacterial fermentation of milk with yogurt cultures. During fermentation, bacteria produces lactic acid from the lactose of milk giving milk a thick texture. Dahi is added to various recipes to enhance their flavor and appearance. Boil milk on a medium to low flame. Simmer it for 15 min on a low flame and keep it stirring. Allow the milk to cool down and add a teaspoon of yogurt to the milk. Stir well and keep it aside.
