Kheer and Payasam are the many regional varieties of the same dessert. Kheer or rice pudding is one of the most popular desserts in North India. Traditionally, Kheer or Payasam is prepared from rice and is served as a dessert after meals. It is quick and easy recipe which does not demand extra ordinary cooking skills. Kheer is prepared from left over rice or raw rice, milk, sugar, raisins, saffron, Almonds, cashews and cardamom. Traditional recipe of Payasam includes ingredients such as Jaggery, rice, vermicelli, cardamom, cinnamon, ghee, raisins, cashews, Moong dal and coconut milk. It is easily digestible and naturally gluten free.  Payasam has its share of health benefits. It lowers cholesterol and it is an amazing source of energy.
